Easter Bunny Chocolate Cake

Ingredients

  • 310g Queen writing icing
  • 28 marshmallows (half pink and half white)
  • 150g mini smarties
  • 493g milk chocolate frosting
  • 3 extra large eggs
  • 1/3 cup vegetable oil
  • 540g devil's food cake mix

Method

  1. Prepare cake mix according to packet directions. Bake as directed. When cooled, slice cake in half, spread frosting sachet on bottom layer and scatter half the mini smarties over frosting. Cover with top half.
  2. Snip 2 sides of a marshmallow, on an angle, to create bunny ears. Make a slit across the tops of whole marshmallows and stick the ears in the slits. Press to secure. Use writing icing to secure smarties for the noses, and decorate faces.
  3. Spread frosting tub all over cake, and decorate top with bunnies. Create more ears with remaining marshmallows. Press ears and remaining mini smarties around the sides of the cake.
