Sriracha Chicken Drumsticks with Asian Slaw

This sriracha chicken drumstick recipe is sure to become a family favourite. Serve the chicken with crunchy slaw and rice and beat the midweek dinner rush.

Ingredients

  • 1.2kg chicken drumsticks 1.2 kilograms chicken drumsticks
  • 1/2 cup sriracha mayonnaise 1 half cup sriracha mayonnaise
  • 1/4 cup salt-reduced soy sauce 1 quarters cup salt-reduced soy sauce
  • 2 tbs honey 2 tablespoon honey
  • 1 tbs sesame seeds 1 tablespoon sesame seeds
  • 2 tbs vegetable oil 2 tablespoon vegetable oil
  • 520g pkt Woolworths crunchy noodle coleslaw kit 520 grams pkt Woolworths crunchy noodle coleslaw kit
  • 450g pkt microwave jasmine rice 450 grams pkt microwave jasmine rice

Method

  1. Preheat oven to 210°C/190°C fan-forced. Line a large baking dish with foil, then baking paper.
  2. Place drumsticks, mayonnaise, soy, honey, sesame seeds and oil in a large bowl. Toss until chicken is well coated. Transfer to dish. Add cup water. Bake, turning every 15 minutes, for 45 minutes or until chicken is golden and cooked through. Cover dish with foil and rest for 5 minutes.
  3. Meanwhile, make slaw according to packet instructions. Heat rice according to packet instructions. Serve chicken with slaw and rice.
