Zucchini, Pea & Cheese Frittata
Ingredients
- 1 small red onion, thinly sliced
- 3 medium zucchini, trimmed, sliced
- 160g rocket salad mix
- 2 tbs olive oil
- 6 eggs
- 1 cup frozen peas, thawed
- 250g cottage cheese
Method
- Heat 1 tbs oil in a frying pan over medium heat. Add zucchini and half the onion and cook, turning, until golden.
- Preheat grill on high. Whisk eggs in a large bowl. Stir in cheese, peas and half of the salad mix. Season. Pour egg mixture into pan over zucchini and cook for 12-15 minutes or until egg is just set.
- Transfer pan to grill and cook for 5 minutes or until top is golden and mixture is cooked through.
- Cut frittata into wedges and serve topped with remaining salad and onion.
