Yaki Soba with Prawns
This spicy prawn and noodle stir fry is tastier and quicker than takeaway.
Ingredients
- 1 tbs canola oil
- 320g vegetable stir fry mix, pack
- 250g soba noodles
- 2 large red capsicums, thinly sliced
- 3 tbs chilli garlic sauce
- 5cm ginger, peeled and grated
- 2 eggs
- 200g prawns, peeled
- 3 tbs soy sauce, reduced salt
- 1 tbs toasted sesame oil
Method
- Cook the soba noodles according to pack instructions, drain well and set aside.
- Heat the oil in a wok on high heat, add the mixed vegetables and capsicums and stir fry for 3 minutes. Add the garlic and chilli paste and ginger and cook for 2 minutes.
- Heat another pan on medium heat with a drizzle of oil and pour in the eggs. Cook for 30 seconds and add the prawns. Cook for 1 minute to heat through and break up the egg with the back of a spoon.
- Pour the soy sauce and sesame oil into the wok, add the noodles, prawns and egg mix and cook for 1 minute, tossing to combine. Divide between 4 bowls and serve with chopped spring onions on top, if desired.
