Swiss Muesli

This recipe is from Essie, who lives in Christchurch - she was the 3rd Place winner in the Snacks and Light Meals section of our recent NZ's Favourite Recipe competition.

Ingredients

A light choice breakfast or snack for any time of day.
• 1 medium apple
• 1/2 cup thick low-fat plain yoghurt
• 2 Tbsp chopped almonds and/or hazelnuts
• 1 cup rolled oats

Cooking Instructions

Grate the apple including skin into a mixing bowl. Add the yoghurt and mix well. Stir the nuts and oats through the apple mixture until well combined. Serve immediately with chopped fruit if desired.
