A healthy and very tasty raw green salad.

1 medium (raw) beetroot, peeled & julienned
1 cup each: broccoli florets, diced cucumber
1 cup cooked black beans, drained & rinsed
2 tablespoons each: sliced Italian parsley, mint, coriander
120g packet kale & spinach mix
2 teaspoons each: sunflower seeds, pumpkin seeds
1 cup diced feta cheese, optional
Dressing: 1/2-3/4 cup good vinaigrette
Blanch the broccoli, until crisp tender. Refresh in icy water.
Place all the salad ingredients in a bowl and toss. Drizzle the dressing over the salad. Mix well.
