Strawberry & Lemonade Scones
Ingredients
- 3 cup self-raising flour, plus extra for dusting
- 1 cup thickened cream
- 1 punnet strawberries, plus extra to serve
- 1 tsp vanilla bean paste
- whipped cream and jam, to serve
- 1 cup cold lemonade
Method
- Preheat oven to 200°C. Grease and line baking tray with baking paper.
- Stir flour, cream, lemonade and vanilla in a bowl until just combined. Add strawberries and fold through.
- Turn out onto a floured surface. Gently press out until 5.5cm thick. Use a 5.5cm plain cutter, dusted in extra flour, to cut into rounds. Place rounds on tray, so they are slightly touching. Bake for 20-22 minutes or until lightly golden.
- Cool slightly on tray then halve and serve with whipped cream, jam and extra strawberries.
