Slow Cooker Pumpkin Soup

Ingredients
- 1/2 cup thickened cream
- 1 leek (washed)
- 2kg butternut pumpkin (roughly chopped)
- 2 tbs extra virgin olive oil
- 1L chicken stock
- 1 1/2 tbs rosemary
- 2 tbs chives
- 1 brown onion (chopped)
- chargrilled bread (to serve)
Method
- Heat oil in a large frying pan over medium heat. Cook leek and onion, stirring, for 4 minutes or until softened. Add rosemary and cook, stirring, for 1 minute or until fragrant.
- Place leek mixture in the bowl of a 5.5L slow cooker. Add pumpkin, pour over stock, cover with lid and cook on low for 6 hours.
- Turn off slow cooker. Using a stick blender, blend mixture, until smooth. Stir in 1/3 cup cream and season. Ladle soup into bowls, drizzle over remaining cream over soup, scatter over chives and serve with bread.
