Quick Beef Sizzle Schnitzel With Almonds & Potato Salad

Ingredients
- 120g Woolworths flaked almonds, toasted
- 1 tbs extra virgin olive oil
- 400g Woolworths beef sizzle schnitzel
- 1 1/2 cup Woolworths frozen peas, blanched
- 400g tub Woolworths potato salad
- 1/4 bunch continental parsley, leaves picked (to serve)
Method
- Heat a large non-stick frying pan over medium heat. Add almonds and cook, tossing for 2 minutes or until toasted.
- Heat oil in a large frying pan over medium-high heat. Cook beef, in batches, for 1 minute each side or until browned and just cooked through. Transfer to a plate. Cover loosely with foil to rest.
- Place peas in a heatproof bowl. Cover with boiling water. Stand for 3 minutes or until bright green and tender. Drain. Place potato salad in a bowl. Add peas and stir gently to combine.
- Spoon potato salad onto serving plates. Top with beef and sprinkle with almonds and parsley. Serve.
