Potatoes with Avocado

A great salad to have with those summer BBQ's.


6 medium waxy potatoes
1/2 cucumber
4 tomatoes
1 avocado
1 tsp caraway seeds

1 onion, peeled
1 clove garlic, peeled
2 Tbsp sugar
2 Tbsp vinegar
2 Tbsp oil
2 Tbsp water

Cooking Instructions

Scrub the potatoes and microwave, steam, boil or bake whole. Cut the potatoes, cucumber, tomato and avocado into bite-sized chunks. Place in a serving bowl. Using a food processor make the dressing by blending the onion, garlic, sugar, vinegar, oil and water together until thick and creamy. Pour the dressing over the potatoes and mix well. Serves 4-5.

Hints & Tips

If you don't have a food processor to make the dressing, just chop the onion and garlic very finely and mix with the remaining ingredients.
