Potato Pile Up

The staple of life - potatoes!


4 medium all-purpose potatoes
½ cup low fat sour cream
1 tomato, sliced
6 slices salami or 2 slices ham
½ cup grated cheese
1 cup roughly chopped mushrooms
1 Tbsp finely chopped chives
6 - 8 olives, sliced (optional)

Cooking Instructions

Wash and scrub the potatoes. Cut in half and boil 25-30 minutes or until softened. Slice the potatoes and place in a flan or quiche dish, pour over the sour cream and top with all the ingredients. Grill for 4-5 minutes or until the cheese melts and begins to turn golden brown. Serves 4.

Pierce and bake on 100% power for 10-12 minutes or until softened. Stand 4 minutes. Assemble as instructed. Cook on 100% power for 3 minutes.
