Pork, Pineapple & Coconut Stir-Fry
Ingredients
- 1 red capsicum, deseeded and sliced
- 1 bunch choy sum, roughly chopped
- 1 tbs ginger, finely shredded
- 1/4 pineapple, peeled, cut into chunks
- 2 tbs oyster sauce
- 3 cups jasmine rice, steamed (to serve)
- 500g pork fillet, sliced
- 3 garlic cloves, crushed
- 2 tbs coconut oil
- 2 tbs palm sugar
Method
- Heat oil in wok until smoking. Add the pork, garlic and ginger. Stir-fry until golden. Add oyster sauce and palm sugar and toss well to coat. Add capsicum, pineapple, spring onion and choy sum. Stir-fry for 1 minute.
- Serve stir-fry with jasmine rice.
