No Cook Strawberry Bars
This quick snack offers a moist, juicy chew.
Make Ahead: The bars can be refrigerated in an airtight container for up to 1 day; they fare best when also individually wrapped in plastic wrap.
Ingredients
- 250g strawberries, hulled
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ cup dried apricots
- 1½ cups rolled oats
- 1 cup shredded coconut
- ¼ cup white chia seeds
Method
- Line a small, deep rectangular baking tray with baking paper.
- Place strawberries, vanilla, cinnamon, and dried apricots in a blender and pulse until smooth.
- Transfer mixture to a large bowl and add rolled oats, 3/4 cup shredded coconut, and chia seeds and stir to combine.
- Pour mixture into prepared tray and press down firmly. Press in remaining shredded coconut.
- Freeze for 1 hour or until firm. Using a sharp knife, cut the block into 12 equal portions. Store in the fridge until ready to serve.
