Nic Nat Nachos
Ingredients
- 1/2 avocado, mashed
- 2 tsp lemon juice
- 1 small tomato, diced
- 1/4 green capsicum, finely sliced
- 1/2 small carrot, shredded
- 1 cup zucchini, grated
- 1/2 cup canned no added salt red kidney beans, drained
- 100g unsalted natural corn chips
- 1/4 cup canned corn kernels, drained
- 1/2 cup canned crushed tomato
- 250g low fat beef mince
- 2 tbs natural yoghurt
- 2 tsp olive oil
- 1/3 cup reduced fat tasty cheese, grated
Method
- Heat oil in a small frying pan over medium heat.
- Add mince and cook for 5 minutes until well browned.
- Add zucchini, beans and crushed tomato and cook for 5 minutes until vegetables are tender.
- Preheat grill to medium high.
- Pile corn chips onto a heatproof plate.
- Top with half of the cheese.
- Grill for 1-2 minutes until melted.
- Roughly mash avocado and lemon juice with a fork.
- Top corn chips with mince, tomato, corn, carrot, capsicum, remaining cheese, avocado and yoghurt.
