Moroccan Chicken

1 large onion, sliced
1 Tbsp each: olive oil, grated root ginger
1 tsp each: crushed garlic, ground turmeric, mixed spice
4 large tomatoes, cut into 8 wedges
1 green pepper, seeded and cubed
3 cloves garlic, crushed
400g skinned and boned chicken, diced
3/4 cup chicken stock
1 cup of couscous
1 Tbsp olive oil
2 tsp chopped mint
Salt and pepper

Cooking Instructions

In a large frying pan, saute the onion in the oil, until softened. Add the ginger, garlic and spices and saute for 30 seconds. Add the other ingredients. Cover and simmer for about 10 minutes or until the chicken is cooked. Delicious served on couscous. Couscous: Combine 1 cup couscous with 1 cup boiling water. Stand until the water is absorbed, about 2 minutes. Fluff with a fork. Add 1 Tbsp olive oil, 2 tsp chopped mint, salt and pepper to taste.
