Mixed Herb Dressing

This dressing is also excellent for marinating fish, chicken or pork.


1/2 cup white wine vinegar or cider vinegar
3 small shallots, finely diced
2 cloves garlic, crushed
4 tsp mixed dried herbs
Salt and pepper to taste
2 tsp Dijon mustard
3/4 cup extra virgin olive oil

Cooking Instructions

Whisk the vinegar, shallots, garlic, herbs, salt and pepper, until well combined. Cover and keep in a cool place for about 8 hours. Strain through a sieve. Whisk the mustard then the oil into the strained vinegar. Cover and refrigerate, until ready to use. Makes 1 cup.

Hints & Tips

Serve over vegetable and pasta salads or hot potatoes.
