Mexican Wrap

Ideal for a midweek meal or packed lunch!
Make the most of leftovers from a roast chicken with these Mexican chicken and black bean wraps, which need just 5 minutes to prep.
Ingredients
- 1 whole-grain wrap
- 2 lettuce leaves
- 1/2 carrot, grated
- 1/4 red capsicum, thinly sliced
- 20g grated cheddar
- 1/3 cup of protein, like chicken, mince or beans etc
Method
- Top a wrap with 2 lettuce leaves, your choice of protein, carrot, capsicum, and cheese. Wrap to enclose.
Handy Tips
For other wrap ideas, you could use leftover roast chicken and pumpkin with mashed avocado and baby spinach leaves.
