Mediterranean Style Potato Salad

With a delicous combination of vegetables, feta and salami this salad will definitely become a summer favourite.

4-6 waxy potatoes
4 tomatoes
1 small red skinned onion, cut into rings
3 peppers, roasted (refer below for roasting instructions)
100g feta cheese, cubed
1/2 cup olives
8-10 slices salami
1/2 finely chopped fresh parsley
1/4 cup oil
2 Tbsp red wine or lemon juice
1 tsp sugar

Cooking Instructions

Scrub the potatoes and microwave, steam, boil or bake whole. Slice into thick wedges while still warm. Place the potato, tomatoes, onion, peppers, cheese, olives, salami and parsley on serving plates. Blend the oil, vinergar and sugar together. Pour over the salad. Serve hot, warm or cold.

Hints & Tips

To roast peppers, halve and de-seed your peppers. Grill skin side up, until the skin blisters and blackens. Cover with a paper towel while they cool. Slip off the skin.
