2 tablespoons lemon juice
1 teaspoon each: dried oregano, crushed garlic, Dijon mustard
1/2 cup olive oil
1 1/2 cups vegeroni pasta shapes
2 tablespoons olive oil
1 each: large red & yellow peppers
18 Kalamata olives, pitted
2 spring onions, sliced
2 tablesppons capers, rinsed and rained
200g basil-flavoured feta cheese, drained & diced
freshly ground black pepper to taste
Whisk the lemon juice, oregano, garlic and mustard in a bowl. Gradually whisk in the oil.
Boil the pasta according to the packet instructions. Wash under cold water. Drain well. Combine with the oil in a large bowl. Dice the peppers, halve the olives and add to the pasta with the spring onions, capers and cheese. Add the dressing. Toss gently to combine. Season.
