Mediterranean Mashed Potatoes

4 floury potatoes
1/4 cup milk
1/4 cup sliced sun-dried tomatoes
2 Tbsp oil that the tomatoes were packed in
1/4 cup sliced olives
freshly ground black pepper

Cooking Instructions

Peel the potatoes and cut into even sized pieces. Boil for 25-35 minutes or until soft. Drain.
Mash in the milk, adding extra milk if necessary to make the potatoes smooth and creamy.
Stir in the sundried tomatoes, oil and olives. Season with pepper.
