Halloween Mummy Jacket Potatoes

Ready in just four easy steps, these yummy mummy jacket potatoes are the perfect Halloween treat.
Ingredients
- 1 tsp olive oil
- 400g meatballs
- 500g pasta sauce
- 5 oval white potatoes, halved lengthways
- 1/2 cup shredded tasty cheese
- 1 tsp pitted black olives, sliced
Method
- 1. Preheat oven to 220°c/200°c fan-forced and line baking tray with baking paper.
- 2. Heat oil in a large frying pan over medium-high heat. Add meatballs and cook, turning occasionally, for 6 minutes or until browned. Reduce heat to medium, stir through sauce and simmer for 5 minutes or until thickened.
- 3. Place potato in a large saucepan and cover with cold water, then bring to a boil. Reduce heat to low and cook for 15 minutes or until tender. Drain, then cool. Scoop potato flesh from centres, leaving a 0.5cm edge. Place on tray.
- 4. Place 1 tbs sauce into potato shells, then top with 2 meatballs. Place cheese over meatballs and bake for 2 minutes or until cheese has slightly melted. Place 2 olive slices on meatballs for eyes, then serve with remaining sauce.
Handy Tips
Use leftover potato flesh for mashed potato or in salmon patties.
