Green Eggs & Ham Fritters

  • 2 cups frozen peas
  • 75g (2 slices) ham, diced
  • salt & pepper to taste
  • 2 large eggs, well beaten
  • 1/4 cup self-raising flour
  • 2 tablespoons milk
  • 1-2 tablespoons canola oil for frying

Cooking Instructions

Place the peas in a large microwave-proof bowl. Microwave for 3-4 minutes, until hot. Mash roughly. Cool.

Combine with the ham, salt, pepper, eggs, flour and milk. Mix well.

Heat a little oil in a non-stick frying pan. Take heaped tablespoons of the mixture and place in the pan. Cook for about 2 minutes each side until golden and hot. Great served drizzled with mayo, sour cream or plain yoghurt

Serves 4. Made in 25 minutes.
