Gingered Carrot Strudel

A great way to get children to eat their carrots....


3 cups grated carrot
1/4 cup finely chopped walnuts
Freshly ground black pepper
1/4 cup light sour cream or yoghurt
1 Tbsp finely chopped root ginger
4 sheets filo pastry
2 Tbsp polyunsaturated oil

Cooking Instructions

Mix the carrot, walnuts, pepper, sour cream and ginger together. Place one sheet of the filo pastry on a clean, flat, dry surface. Brush sparingly with oil. Place the second sheet of pastry on top of this. Brush with oil. Continue layering until you have used the 4 sheets. Place the filling along the length of the pastry. Roll up. Bake at 200oC for 20-25 minutes or until golden brown. Serves 4.
