Tasty take on mushrooms

- 4 cloves garlic, crushed
- 3 tablespoons olive oil
- 8 large portabello mushrooms
- 2 tablespoons diced gherkins
- 1/2 cup chopped parsley
- finely grated rind & juice 1 lemon
- freshly ground black pepper to taste
Combine the garlic with the oil and brush over the mushrooms. Grill or barbecue until tender about 5 minutes.
Combine the gherkins, parsley, lemon rind and juice and dot over the mushrooms. Season. Serve warm or at room temperature.
Can prepare the gherkins, parsley, lemon rind and juice mix the day before.
Serves 8 as an accompaniment. Made in 20 minutes.
