Flying Saucer Sandwiches
Make an out-of-this-world snack for the kids with this fun flying saucer sandwich recipe. They're nutritionally approved and ready in just three steps.
Ingredients
- 150g chicken tenderloins
- 1/4 cup light Greek-style yoghurt
- 8 slices wholemeal bread
- 1/2 cup iceberg lettuce, finely shredded
Method
- Bring a small saucepan of water to the boil over high heat. Reduce heat to medium. Add chicken and simmer, uncovered, for 6 minutes or until chicken is cooked through. Remove chicken from pan and transfer to a board. Using 2 forks, finely shred chicken.
- Combine chicken and yoghurt in a small bowl. Season with pepper.
- Using a 9cm round cutter, cut 8 rounds from bread slices. Place lettuce in centre of 4 rounds. Top with chicken mixture. Using your fingers, flatten remaining rounds slightly, then place over chicken mixture. Seal edges with a fork. Serve.
