Festive Fruit Mince Log

  • 4 eggs, separated
  • ½ cup caster sugar
  • 1 cup fruit mincemeat
  • ½ cup self-raising flour
  • ½ cup icing sugar
  • 3/4 cup cream
  • 2 tablespoons brandy


  1. Preheat the oven to 190¡C. Grease and line a 30cm x 20cm sponge roll pan. Beat the egg yolks and caster sugar, until thick and creamy. Carefully fold in the fruit mincemeat and flour. Beat the egg whites until stiff then fold into the mixture. Pour into the prepared pan. Bake for about 15 minutes or until just cooked.
  2. Turn onto a sheet of baking paper lightly dusted with icing sugar. Roll up with the paper from a long side. Cool. Whip the cream, 2 tablespoons of icing sugar and brandy together, until thick.
  3. Carefully unroll the cooled log. Spread with the cream. Roll up and place on a serving plate. Cover and chill for at least 1 hour or overnight. Lightly dust with icing sugar before serving.
