Earl Grey Roasted Lamb

2kg leg lamb
3 teaspoons dried oregano
1 tablespoon sugar
1 1/2 cups strong, Earl Grey Tea

Cooking Instructions

Preheat the oven to 160oC. Rub the lamb with the oregano. Place fat-side up in a roasting pan. Bake in the oven for 1 hour. Dissolve the sugar in the tea and pour over the lamb. Baste well and continue cooking for another 1 hour., basting often. A gravy can be made from the pan liquid.
