Crunchy Combo Chicken Salad
Another great tasting salad for the Summer.

1 cup pasta spirals
8-10 green beans or asparagus spears
1 cup crunchy combo bean sprouts
2 cups cooked chicken, sliced
1 carrot, finely sliced spinach leaves
2 Tbsp oil
2 Tbsp spiced vinegar
1 tsp sugar
2 Tbsp finely chopped fresh coriander or parsley
Cook the pasta in boiling salted water for 8-10 minutes or until soft. Drain. Blanch the green beans or asparagus in boiling water. Cool. Place the pasta, beans, bean sprouts, chicken, carrot and spinach in a large bowl. Add the dressing and toss gently just before serving.
Dressing: Blend the oil, vingegar, sugar and coriander together.
Hints & Tips
Using a cheese slicer of vegetable peeler to slice the carrot makes this salad quicker and more eye catching.
