Crisp Salad with Pork Crackling & Pomegranate
Try this colourful salad for something a bit different at your next bbq or family dinner.
Ingredients
- 1 carrot, shredded
- 2 Lebanese cucumbers, cut into matchsticks
- 1 tbs ginger, grated
- 6 radishes, thinly sliced
- 4 spring onions, finely sliced
- 1 cup pork crackling, broken
- 1/4 cup lemon juice
- 1/4 cup mirin
- 75g pomegranate arils
- 100g kale leaf and spinach
- 1/3 cup soy sauce
- 1 tsp caster sugar
Method
- Place spring onions into a bowl of iced water and set aside for 10 minutes. Whisk soy sauce, mirin, lemon juice, ginger and caster sugar together in a small jug.
- Combine salad leaves, cucumber, carrot and radish in a bowl. Drain spring onion and add to salad.
- Drizzle dressing over salad. Scatter with pork crackling and pomegranate arils. Serve immediately.
