Chilli Beef Burritos
Make these easy beef burritos for a simple midweek supper.
The meat filling is also great stuffed into a crispy tacos, or as an easy chilli con carne!
Ingredients
- 1 tsp oil
- 300g beef mince
- 390g can red kidney beans, drained
- 400g can Mexican flavoured tomatoes
- 6-8 burritos (1-2 per person)
- 1 avocado, mashed
- 150g lite sour cream
- 1/2 cup grated Edam cheese
- 1 cup shredded lettuce
- 2 tomatoes, sliced
Method
- Heat the oil in a frying pan. Cook the mince until browned. Drain off any liquid.
- Add the kidney beans and tomatoes. Cook for 10-15 minutes.
- Heat the burritos as per packet directions.
- Spread the avocado onto the burritos then add the mince mixture and other ingredients.
- Roll up the burritos and cut in half to make them easier to eat.
- Serve with extra salad ingredients.
Handy Tips
- If avocados are not in season, use hummus. If you don’t have any burritos, use the mixture in pita bread pockets or over a baked potato.
- Draining off the liquid after browning the mince reduces the level of fat in the meal.
