Chicken Alfredo Pasta Bake
A delicious creamy pasta recipe for the whole family
If you love cheese, then you'll love this pasta recipe. It's a take on a macaroni and cheese but with some tasty changes.
Ingredients
- 1 tablespoon olive oil
- 3 chicken breasts, cubed
- salt, to taste
- pepper, to taste
- 4 cloves garlic Crushed
- 2 ½ cups chicken Stock
- 2 ½ cups heavy cream
- 450g penne pasta
- 220g Parmesan cheese
- 230 g Mozzarella cheese
- 1 handful fresh parsley, chopped
Method
- In a pot, heat oil and add the diced chicken.
- Season chicken with salt and pepper.
- Add garlic, then brown the chicken.
- Add Chicken Stock, cream, and pasta, and bring to a boil.
- Cover and reduce the heat to a simmer for 15-20 min.
- Turn off heat and stir in 2/3 of the parmesan cheese.
- Pour half of the pasta into a greased baking dish. - ideally close to 30x20cm
- Sprinkle evenly with half of the mozzarella cheese.
- Add the rest of pasta evenly across as a 2nd layer. Sprinkle the remaining mozzarella and parmesan across the top.
- Add pasta bake back into the oven for 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.
