Cheesy Pasta Bites
Great for packed lunches!
These cheesy bites are delicious and great as a snack on the go!
Ingredients
- 150g pumpkin, peeled and roughly chopped
- 150g cauliflower, roughly chopped
- 250g macaroni
- ½ bunch thyme, leaves picked
- 1½ cups light tasty shredded cheese
Method
- Preheat oven to 180°c. Line a muffin pan with baking paper.
- Cook the macaroni according to packet directions. Drain and set aside to cool.
- Meanwhile, steam pumpkin and cauliflower over boiling water for 15 minutes or until soft. Transfer to a blender and blitz until smooth. Season with pepper to taste.
- Stir together vegetable mixture, macaroni, thyme, and cheese in a large bowl. Divide mixture into muffin pan and bake for 20 minutes or until golden brown.
