Cheesy chicken taco melts
Easy, cheesy and tasty, the whole family will love these chicken taco melts. All you need to make them is a taco melt kit and a few simple ingredients.
Ingredients
- 3 cup shredded cooked chicken
- 385g Old El Paso Taco Melt The Kit
- 3 tomatoes, finely chopped
- 1 small red onion, finely chopped
- 1/2 bunch coriander, leaves picked, coarsely chopped
- 1/2 lime, juiced
- 250g cream cheese, coarsely chopped
- 1 1/2 cup shredded tasty cheese
- 5ml olive oil cooking spray
Method
- Place chicken and large seasoning sachet from kit in a bowl and toss to combine.
- Place tomato, onion, coriander and lime juice in a small bowland stir to combine. Season with pepper.
- Place cream cheese in amicrowave-safe bowl. Microwave on high for 1 minute or until softened slightly. Add tasty cheese and stir to combine. Microwave on high for a further 1 minute or until cheese sauce is melted and smooth. Add small seasoning sachet from kit and stir to combine.
- Spread cheese sauce over each tortilla from kit. Place 1/2 cup chicken mixture and 1 tbs salsa in centre of each tortilla. Fold each tortilla according to packet instructions to enclose filling.
- Spray a large chargrill pan with oil and heat over medium-high heat. Cook 2 taco melts a ta time for 5 minutes, turning halfway through cooking, or until tortillas are golden. Serve taco melts with remaining salsa
