Chargrilled Nectarines with Ice Cream & Honey
Perfect for the BBQ Season!
Celebrate summer with sweet, juicy chargrilled nectarines topped with ice-cream, crunchy macadamia and a drizzle of honey.
Ingredients
- 4 yellow nectarines, halved, destoned
- 2 tbsp extra virgin olive oil
- 1/3 cup honey
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1L of ice-cream
- 1/3 cup macadamia nuts, toasted
Method
- Heat a barbecue grill or chargrill pan over medium-high heat. Brush nectarines all over with oil. Cook for 4 minutes on each side or until charred.
- Place honey, vanilla, and lemon juice in a small microwave-safe bowl and microwave on high for 20 seconds.
- Top nectarines with ice-cream, and serve drizzled with honey mixture and scattered with macadamias.
