Carrots with Lemon

This slightly sweet citrus sauce over vegetables is magnificent. It is great on all sorts of vegetables - parsnip, carrot, swede, kumara, turnip, pumpkin or yam - either by themselves or as a mixture.


3 medium carrots peeled and cut into rings
1 Tbsp brown sugar
1 Tbsp butter
1 tsp grated lemon rind
2 Tbsp lemon juice
2 Tbsp finely chopped fresh herbs e.g. coriander
freshly ground black pepper

Cooking Instructions

Place the vegetables, brown sugar, butter, rind, juice and pepper in a microwave proof dish. Mix, cover and cook on high power for 4-6 minutes or until tender. Stir once during cooking. Mix the herbs through the vegetables.
