Carrot Mac & Cheese Bites

Ingredients
- 2 tbs extra virgin olive oil
- 1 large brown onion, coarsely grated
- 3 medium carrots, coarsely grated
- 1/3 cup plain flour
- 3 cups milk
- 1 cup Italian inspired cheese
- 3 cups cooked macaroni
- 1 bunch chives, finely chopped
Method
- Preheat oven to 200°C/180°C fan-forced. Grease a 12-hole, 1/3-cup capacity muffin pan.
- Heat oil in a large saucepan over medium heat. Cook onion and carrot for 10 minutes, stirring, or until softened. Sprinkle over flour, then stir for 1 minute or until combined. Gradually add milk, stirring to combine. Bring to a simmer, then cook for 10 minutes or until mixture has thickened. Remove pan from heat. Fold in cheese, macaroni and three-quarters of the chives until cheese has melted. Spoon mixture into muffin pan. Sprinkle with half of the remaining chives.
- Bake for 25 minutes or until golden brown. Cool in pan for 10 minutes. Serve topped with remaining chives.
