Caramelised Onion & Kumara Mash
A mash potato alternative
Delicious mashed kumara recipe with lots of flavour, you can use any sweet potato variant.
Ingredients
- 1 large onion, peeled and finely chopped
- 2 cloves garlic, peeled and finely chopped
- 2 Tbsp olive oil
- 4 large orange kumara
- 1/3 cup light sour cream
- 1/4 - 1/2 cup milk
- freshly ground black pepper
- squeeze of lime juice
- diced chives, optional
Method
- Place the onion, garlic and oil in a saucepan. Cover and simmer on a very low heat for 25-35 minutes or until the onions are succulent and caramelised.
- Peel the kumara and cut into even sized pieces.
- Cover and boil in a little water for 25-35 minutes or until soft. Drain the kumara.
- Add sour cream and milk, mash to a smooth consistency adding more milk if necessary. Add the onion and juices. Mix well.
- Season with salt, pepper & a squeeze of line juice to taste.
- Top with chives (optional)
