Caramelised Onion & Kumara Mash

A mash potato alternative

Delicious mashed kumara recipe with lots of flavour, you can use any sweet potato variant.

Ingredients

  • 1 large onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 2 Tbsp olive oil
  • 4 large orange kumara
  • 1/3 cup light sour cream
  • 1/4 - 1/2 cup milk
  • freshly ground black pepper
  • squeeze of lime juice
  • diced chives, optional

Method

  1. Place the onion, garlic and oil in a saucepan. Cover and simmer on a very low heat for 25-35 minutes or until the onions are succulent and caramelised.
  2. Peel the kumara and cut into even sized pieces.
  3. Cover and boil in a little water for 25-35 minutes or until soft. Drain the kumara.
  4. Add sour cream and milk, mash to a smooth consistency adding more milk if necessary. Add the onion and juices. Mix well.
  5. Season with salt, pepper & a squeeze of line juice to taste.
  6. Top with chives (optional)
