Beef and Vegetable Noodles
For a hearty weeknight meal, you can rely on this stir-fry with beef, noodles and lots of vegetables.
You can swap out the meat for another protein like chicken, pork, or even prawns!
Ingredients
- 2 beef schnitzel (300g)
- 1 Tbsp polyunsaturated oil
- 1 onion, finely chopped
- 2 carrots, finely sliced
- 1 cup broccoli florets
- 4 - 5 mushrooms
- 2 stalks celery, sliced
- 3/4 cup water
- 1 Tbsp cornflour
- 2 Tbsp soy sauce
- 1 Tbsp black bean
- 1 packet of noodles
Method
- Cook the noodles according to manufacturer's instructions, but do not use the flavour sachets. Drain.
- Cut the schnitzel into thin strips. Heat the oil in a large pan and sauté the meat until browned on the outside but still pink on the inside. Remove the meat from the pan and keep warm.
- Sauté the vegetables until tender but still slightly crisp, keep the pan moist by adding a little water.
- Blend the water, cornflour, soy sauce, and black bean sauce together.
- Return the meat to the pan, add the drained noodles and soy sauce mixture. Stir together and heat until well mixed and warmed.
