Banana Bread & Butter Pudding

Banana's are very low in Saturated Fat, Cholesterol and Sodium. They are also a good source of Dietary Fiber, Vitamin C, Potassium and Manganese, and a very good source of Vitamin B6.

3 medium bananas, peeled and sliced into 2cm rounds
3 Tbsp lemon juice
3 Tbsp marmalade
3 thick slices white bread, crusts removed
3-4 Tbsp butter, softened
2 eggs
1 1/2 cups milk
2 Tbsp sugar
1 tsp ground cinnamon

Cooking Instructions

Toss the banana in the lemon juice to prevent discolouration. Place on the base of a 20cm x 17cm baking dish. Dot with the marmalade. Butter the bread and cut into 3 cm cubes. Place on top. Beat the eggs, milk and sugar and pour over the pudding. Allow to soak for 15 minutes. Dust with the cinnamon. Meanwhile, pre-heat the oven to 180oC. Bake the pudding for 30-40 minutes, until puffed and set.
