Baked, Stuffed Potatoes
Lots of great ideas for one of our most loved vegetables - The Potato.

4 medium potatoes
Seasoning of your choice
4 tbsp of milk
For potato filling, select 3 of the following and chop into 1cm cubes if required: corn, capsicum, mushrooms, red onion, celery, courgettes.
To bake: Turn your oven to 200oC. Scrub potatoes untilk clean. Using a skewer/fork stab each potato 6 times. Place potatoes on an oven try and bake for about 60 minutes or until soft.
To microwave: Scrub potatoes until clean. Using a skewer/fork stab each potato 6 times. Each medium sized potato takes about 3-4 minutes to cook on high power; so two potatoes will take about 6-8 minutes. Place potatoes on a paper towel and stand for two minutes.
Filling: To stuff potatoes choose three ingredients from the selection available. Prepare as directed: Cut a baked potato in half, scoop out the flesh, place in bowl, and mash it with a tablespoon of milk. Mix in prepared vegetables. Pile back into the potato skins. Grate a little cheese over the top. Re-heat in the microwave for 2 minutes or in the oven for 10 minutes.
