Bacon & Egg Burritos

A different take on bacon & eggs


8 rashers streaky bacon
6 eggs
1/2 cup milk
salt and pepper to taste
1 Tbsp butter
2 Tbsp chopped parsley
4 large flour tortillas
extra butter (or table spread)

Cooking Instructions

Grill or microwave the bacon, until crisp.

Whisk the eggs and milk together. Season. Melt the butter in a heavy saucepan over medium-low heat. Add the egg mixture and cook, stirring gently, until the eggs have scrambled. Wrap the tortillas in waxed paper and microwave for about 1 minute on high. Spread with butter. Place the egg, bacon and parsley in the middle of the top edge of the tortillas. Fold the lower edges of the tortillas up and wrap the sides over.

Excellent served with chilli sauce.
