Bacon & Banana in Parsnip

Parsnips, a great winter vegetable combined with Bacon and Banana- a must to try!


4 medium sized parsnips
3 rashers lean bacon,
finely chopped
2 spring onions, sliced
¼ cup lemon juice
¼ cup maple syrup
2 bananas, sliced

Cooking Instructions

Wash the parsnips, peel only if necessary. Bake, boil, microwave or steam until tender. Keep warm while preparing the stuffing. Using a non-stick pan, sauté the bacon in a little water until cooked and golden brown. Add the spring onion, lemon juice and maple syrup. Sauté briefly until the sauce gives a glossy coating. Remove from the heat and add the banana slices. Stir gently. Cut the parsnips in half lengthways, almost to the base, and spread apart. Spoon the banana mixture into the cut parsnip.

Serves 4.
