Aussie Garlic Prawns & Summer Salsa

  • 24 raw prawn cutlets  
  • 1 tablespoon each: hot chilli sauce, soy sauce, honey, grated root ginger
  • 4 cloves garlic, crushed
  • 1/4 cup lime or lemon juice
Summer Salsa:
  • 2-3 peaches, peeled, stoned and diced
  • 2 tablespoons each: lemon juice, chopped coriander
  • 1 chilli, diced

Cooking Instructions

Thaw the prawns, if frozen. Combine the next 6 ingredients and place in a plastic bag. Add the prawns. Chill for 30 minutes. Meanwhile, combine the ingredients for the salsa.

Thread the prawns on small skewers and barbecue for about 1 minute each side, until pink and cooked. Serve with the salsa.

Serves 4. Made in 15 minutes.
