Air-fryer Zucchini Fries
Whip out the air fryer for this recipe for crunchy, golden air-fried zucchini chips. Served with a fresh zucchini tzatziki, it's the ultimate snack.
Ingredients
- 1/2 cup plain flour
- 1 free range egg, lightly beaten
- 3/4 cup dried breadcrumbs
- 1 tsp garlic powder
- 30g parmesan, finely grated
- 4 zucchini, halved crossways, cut into wedges
- 5ml olive oil cooking spray
- Zucchini tzatziki:
- 1 zucchini, grated
- 3/4 cup light Greek-style yoghurt
- 1 garlic clove, crushed
- 1 lemon, zested, juiced
- 2 mint sprigs, leaves picked, roughly chopped (plus extra leaves to serve)
Method
- Preheat air fryer to 200°C.
- Place flour and egg in 2 separate bowls. Combine breadcrumbs, garlic powder and parmesan in a medium bowl. Working in batches, toss zucchini in flour, dip in egg and then coat in crumb mixture. Place half of the crumbed zucchini in air-fryer basket. Spray with oil. Cook for 8 minutes or until golden. Repeat with remaining crumbed zucchini and oil.
- To make the zucchini tzatziki, combine all the ingredients in a small bowl. Top with extra mint and season with pepper. Serve with zucchini fries.
