Vanilla Easter Egg Cookies

Ingredients

  • 125g butter
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla paste or essence
  • 2 cups plain flour
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 180°C. Lightly grease an oven tray.
  2. Cream the butter and sugar, until light. Add the egg and vanilla and beat well. Sift in the combined dry ingredients and mix until they form a ball. If the dough is warm, chill it for 30 minutes.
  3. Roll out to about 5mm thickness. Using an egg-shaped cutter, make about 12 eggs. Place on the oven tray. Bake for about 15 minutes until lightly brown around the outside. Cool, then decorate with your preferred design.

 

Decorating Suggestions

Easter-Basket-of-EggsBasket of Easter Eggs:

Roll out white icing to about 3mm thickness. Cut out an egg shape to match the cookie. Carefully cut a handle and space in the centre to make a basket shape. Lightly brush the top edges of the cookie with a little melted jam. Place the white basket on the cookie. Pipe white icing around for a boarder. Roll out yellow icing to about 3mm thickness. Cut out small egg shapes and pile then into the basket. Add a few coloured pearls to decorate the handle.

Easter-Choco-EggEaster Choc Egg:

Spread the egg-shaped cookie with dark melted chocolate. Sprinkle with coloured (icing) pearls.

Easter-KoruEaster Koru:

Roll out white icing to about 3mm thickness. Cut out an egg shape to match the cookie. Lightly brush the cookie with a little melted jam. Place the white icing on top. Using black icing, pipe a koru shape onto the cookie. Alternatively, roll out black icing to about 3mm thickness. Using the point of a sharp knife and a koru-shaped template, make an icing koru to place on the cookie.

Easter-Polka-Dot-EggEaster Polka Dot Egg:

Roll out yellow icing to about 3mm thickness. Cut out an egg shape to match the cookie. Lightly brush the cookie with a little melted jam. Place the icing on top. Pipe pink or red icing dots on top.

Easter-Red-White-zigzagEaster Red & White Zig-Zag Egg:

Roll out black icing to about 3mm thickness. Cut out an egg shape to match the cookie. Lightly brush the cookie with a little melted jam. Place the icing on top. Roll out red and white icings to about 3mm thickness. Cut zig-zag patterns to decorate the black icing.
