Tomato Couscous Salad

Get a glimpse of summer with this fresh and tasty salad!

Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 5 tomatoes, chopped
  • 1 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint leaves
  • 2 cloves crushed garlic
  • 3 Tbsp lemon juice
  • 1 Tbsp sugar
  • 1 Tbsp light olive oil
  • freshly ground black pepper

Instructions

  1. Soak the couscous in the water until the water is completely absorbed, about 5 minutes.
  2. Combine all ingredients in a bowl and toss gently.
