Shortcake Kiwi Cookies

- 2 sheets ready rolled sweet short pastry
- 1 teaspoon ground cinnamon, optional
Preheat the oven to 180°C. Lightly grease a baking tray.
Place the pastry on a clean bench or chopping board.
With the point of a sharp knife, cut around the kiwi template to make about 10 cookies. Place on the oven tray. Dust some with cinnamon, if preferred. Bake for about 15 minutes until lightly brown around the outside. Cool, then decorate as desired.Made in 20 minutes. Makes about 10.
Chic Pink Kiwi:
Colour white royal icing with a dash of red food colouring and knead until the colour is evenly distributed. Roll out to about 3mm thickness. Cut a kiwi shape using the template. Brush a cookie with a little melted jam. Top with the icing. Pipe the edges with writing icing. Make dots in the centre and for the eye. Garnish with silver cachous and a red sprinkle for the eye.
Roll out yellow icing to about 3mm thickness. Cut a kiwi shape using the template. Brush a cookie with a little melted jam. Top with the icing. Garnish with long thread coconut.
Little White Kiwi:
Ice a kiwi cookie with white icing. Make lines on the body using writing icing and egg-shaped cookie decorations or similar. Use a little icing to hold the decorations in place.
Mixed Media Kiwi:
Spread a little melted white chocolate over part of the body of a kiwi cookie. Sprinkle with chocolate hail. Lightly dust the rest of the body with ground cinnamon.
Spread a kiwi cookie with chocolate icing or melted dark chocolate. Pipe the edges with white icing. Cut a silver fern from rice paper, silver foil or white paper and place it on the body using a little melted jam to hold it in place. Discard the fern before eating.
