Kumara & Bacon

Ingredients

2 kumara, cut into very thin slices
2 rashers bacon, finely chopped
Olive oil for spraying
1/4 cup pinenuts
1 avocado, sliced
5 handfuls green leafed lettuce
2-3 Tbsp vinaigrette e.g. lemon

Cooking Instructions

Place the kumara on an oven tray. Spray with olive oil. Bake at 200°C for 15-20 minutes. Add the pinenuts and bacon, bake another 3 minutes. Allow to slightly cool on a serving platter and add the rest of the ingredients. Toss the vinaigrette through the salad.
