Christmas Tree Shortbread Biscuits

Shortbread is a traditional Christmas treat that is perfect for cutting into shapes such as Christmas trees, bells, or holly!

Ingredients

  • 250g butter, softened
  • 3/4 cup Chelsea Icing Sugar
  • 1/2 cup cornflour
  • 1 1/2 cups standard grade flour
  • Extra Chelsea Icing Sugar to dust

Method

  1. Preheat oven to 150ºC. Beat the butter and Chelsea Icing Sugar until creamy. Mix in the cornflour and flour.
  2. On a floured surface, roll out dough to 1 cm thick and cut into Christmas shapes with a cookie cutter.
  3. Carefully place on a greased oven tray. Prick with a fork.
  4. Bake for 25-30 minutes, until shortbread is pale but crispy.
  5. Cool on a wire rack and store in an airtight container.
  6. To serve, dust with Chelsea Icing Sugar.
