Caramelised Onion & Kumara Mash
This is one of my favourite recipes!

1 large onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
2 Tbsp olive oil
4 large kumara
1/3 cup light sour cream
1/4 - 1/2 cup milk
freshly ground black pepper
Place the onion, garlic and oil in a saucepan. Cover and simmer on a very low heat for 25-35 minutes or until the onions are succulent and caramelised. Peel the kumara and cut into even sized pieces.
Cover and boil in a little water for 25-35 minutes or until soft. Drain the kumara. Add sour cream and milk, mash to a smooth consistency adding more milk if necessary. Add the onion and juices. Mix well. Season with pepper.
